Easy Granola Recipe for breakfast with a bite.

Granola makes for a more exciting breakfast. It's not something we currently stock at the Good Life Refill but it's so easy to make with Good Life ingredients. No waste needed! You can customise this recipe easily to keep it interesting.

Makes: 600g

Prep: 5 minutes

Cook: 30 minutes

80ml maple syrup

80g nut or seed butter

1 tsp vanilla extract

1/2 tsp salt

1 tbsp ground cinnamon

160g rolled or jumbo oats

30g pumpkin sees

55g flaked almonds

55g walnuts

50g coconut chips

40g cranberries

40g chocolate chips (optional)

  1. Preheat the oven to 165C. Grease or line a baking tray

  2. In a large bowl, add the maple syrup, nut/seed butter, vanilla extract, cinnamon, and salt. Whisk until evenly mixed.

  3. Add the oats, pumpkin seeds, almonds, walnuts, coconut and cranberries into a bowl. Fold them into the wet mixture until all pieces are evenly coated.

  4. Spread this mixture onto the prepared baking tray. Press it into a thin layer using a spatula. Don't worry if not all your mixture fits into the baking tray. Keep the layer thin and bake in two batches if needed. Or freeze half your batch to cook later.

  5. Bake for 20 minutes on the bottom rack of the oven. Remove and use a spatula to toss/flip the granola. Return to oven and bake for an additional 6-7 minutes, then remove.

  6. If using chocolate, add it now and gently toss with the mixture.

  7. Wait for the granola to cool and put it in an airtight container. Store at room temperature or in the refrigerator for up to one month.
