Morning On-The-Go Muesli Bars
Dried fruits and nuts in a tasty bar to keep you fuelled for the day ahead. They’re quick to prepare and great for breakfast on the go. You can vary the nuts and dried fruit used to keep the recipe exciting.
Makes: 12 bars
Prep time: 15 minutes
Cook time: 15 minutes
Ingredients:
50g hazelnuts
50g cashews
50g pecans
150g dried fruit (raising, dates, goji berries, apricots)
5 tbsp vegan margarine (recommend vegan block)
5 tbsp demerara sugar
150ml plant-based syrup (agave, maple, or coconut*)
2 tbsp lemon juice
30g chia seeds
200g jumbo oats
Pinch of ground cinnamon

*To make coconut syrup, dissolve 150g sugar dissolved in 75ml of water on a low heat.
1. Preheat the oven to 180C (350F/Gas 4). Roughly chop the all the nuts with a knife or in a food processor. You can always tie them in a tea towel and smash them with a rolling pin too. Depending on the variety of dried fruit and your preference, either leave them whole or chop into little pieces.
2. Put the margarine, sugar and syrup into a saucepan and bring to the boil over a high heat. Stir in the nuts, dried fruit, lemon juice, chia seeds, oats and cinnamon.
3. Line a baking tray with a greaseproof paper. Use a moistened spatula to spread the mixture over the tray in a 2cm thick layer.
4. Bake in the centre of the oven for around 15 minutes until the mixture is holding together well.
5. Slice into 12 bars while still warm, then leave to cool and store in an airtight container.
