Oats with ginger pears
Porridge is a great way to start the day, but it can get a little boring sometimes. Add a little zing and texture to your porridge with some ginger and pear. You can change the pears to apple if you prefer.
Makes: 3 portions
Time: 5 mins prep + 10 mins cook
For the porridge
4 pitted dates
50g buckwheat grains
1 tsp lemon zest
1 tbsp lemon juice
pinch of salt
600ml of water or plant-based milk
Piece of fresh root ginger or 2tsp of ground ginger
1 cinnamon stick or 2tsp of ground cinnamon
2 small pears
2tbsp pumpkin seeds
4-6 tbsp frozen blueberries
Slice the pears into 1cm cubes, finely chop the ginger (if using fresh) and finely chop the dates.
Put the the oats, buckwheat, chopped fruit, spices, and lemon zest in a small pan.
Add 600ml of water/milk and bring to the boil briefly, then cover, turn off the heat and leave to stand for 10 minutes.
Sprinkle on your toppings and enjoy!
