Smoky Coconut "Bacon"


Coconut split open with coconut chunks ready for cooking.
Coconut meat is versatile for using in baking, cooking and snacking.


 

Smoky Coconut “bacon”

Makes 2 snack portions.

Time: 10 mins prep + 20 mins cooking.


Ingredients

125g coconut chips

1 tbsp maple syrup

1 tbsp soy sauce

½ tsp smoked paprika


Prep:

  1. Preheat the oven to 140C.

  2. Put the coconut chips into a bowl.

  3. Whisk together the maple syrup, soy sauce and 1 tsp of water.

  4. Pour this over the coconut chips and gently mix everything with your hands until the liquid is evenly distributed.

  5. Sprinkle over the paprika and mix it in.


Roast

  1. Line a baking tray with greaseproof and spread the coconut chips on it – they should not be overlapping.

  2. Baking in the centre of oven for 15 – 20 minutes, turning 2-3 times during cooking.

  3. Remove and leave to cool completely.
